Instructions
  1. Heat oven to 400 degrees F.
  2. Line baking sheet with aluminum foil and spray with cooking spray or spread a medium drop of olive oil.
  3. Place chicken, sweet potaoes, sweet onions, cherry tomatoes and sweet peppers on lined baking sheet.
  4. Drizzle with olive oil and sprinkle with salt, pepper and cajun seasoning. Toss to coat all ingredients.
  5. Roast in oven for 15 minutes; stir and return to oven for an additonal 10 minutes or until the veggies and chicken are cook through.
  6. Add extra as needed.
