You can serve over rice or use in tortillas or lettuce wraps and eat them like a taco. Keep dinner prep time fast and don’t stress out about it.  Roasting Veggies and meat is a great idea to prep your meals for the week on Sunday.  Fix a couple of pans of roasted chicken and veggies plus some rice. Meal prep idea: find your containers and add the 1/2 cup of rice, then 1/2 cup of chicken and vegetables per container.  This way you are more in control of your portions, and you don’t have to worry about what to eat with your busy schedule.  It’s very quick and easy and makes your life a little easier.

Instructions
  1. Heat oven to 400 degrees F.
  2. Line baking sheet with aluminum foil and spray with cooking spray or spread a medium drop of olive oil.
  3. Place chicken, sweet potaoes, sweet onions, cherry tomatoes and sweet peppers on lined baking sheet.
  4. Drizzle with olive oil and sprinkle with salt, pepper and cajun seasoning. Toss to coat all ingredients.
  5. Roast in oven for 15 minutes; stir and return to oven for an additonal 10 minutes or until the veggies and chicken are cook through.
  6. Add extra as needed.
