Delecious Beef Enchiladas
This Mexican enchilada dish is a perfect touch to add to your families taco Tuesday menu. It makes take a little more time than the recipe you find on the back of the enchilada can but it tastes so much better.

  1. In a large skillet over medium heat brown the ground beef and with the chopped onions.
  2. Sauce: While the ground beef is cooking, in a large stock pot over medium heat combine olive oil and whole wheat flour. Whisk together and let it come to a simmer for 1 minute. Pour in the red sauce, beef broth, 1/2 tsp salt and 1/2 tsp pepper. Bring to a boil, reduce the heat and simmer.
  3. When the ground beef and onion is finished cooking remove from heat drain fat and add salt, green chilies and black olives (optional) mix well.
  4. Tortillias: In a medium skillet heat some olive oil. fry lightly the tortillias one at a time until soft. Drain on paper towel.
  5. pre heat oven 350 degrees F.
  6. Spread 1/3 cup of the sauce in the bottom of a 9×12 baking dish. You might need two depending on big you make your tortillias. Dip each tortillia one a time in the sauce. Place on plate and add some of the meat mixture. Top with generous amount of grated cheese. Roll up the tortillias and place in baking dish seam side down.
  7. When all the tortillias are rolled up add the remaing sauce on top of the tortillias. Add the remaining cheese on the enchalidias.
  8. Bake for 20 minutes. sprinkle with freshly chopped cilantro over the top and serve.
