Finding the perfect beef enchiladas recipe has always eluded me until I found a new way to prepare them. It really started when I and my husband visited a new Mexican restaurant for Cinco de Mayo. Of course, I wasn’t really concerned about the food as ordering one of there margaritas. They were excellent by the way.
As our order arrived and we started eating we noticed that the food really wasn’t very spicy for a Mexican restaurant. Sometimes you just wonder how these small restaurants stay in business when the food is not even above average. So the next day I decided to try my own take on the beef enchilada.

I searched many different enchilada recipes online and to my surprise, I found some great ideas. One of my favorite hacks was to first fry the tortillas and then dip them in the red sauce. Mixing your favorite red sauce and broth makes the enchiladas stay soft. I really do think this is the magic sauce for making the perfect beef enchiladas.

I think next time I’m going to try a real authentic Mexican enchilada recipe with all the spices and tomato paste and compare the two recipes to see what family prefers.
