Creamy Mushroom & Barley Soup

  1. Place the mushrooms in a small bowl. Add water and let soak overnight. Transfer mushrooms and soaking liquid to a small saucepan. Cook over medium heat until the mushrooms are tender, about 30-35 minutes. Drain mushrooms, reserving soaking liquid. Coarsely chop mushrooms; set aside.
  2. Add barley to a small saucepan with 3 cups stock. Bring to a boil and let simmer until the barley is tender, about 45 minutes. Stir in butter; set aside.
  3. In a medium saucepan, bring the remaining 7 cups stock to a boil with the carrots, celery, onions and reserved mushrooms and soaking liquid. Stir in the cooked barley mixture. Season with salt and pepper.
  4. In a small bowl, stir together the sour cream and the flour. While stirring, slowly add 1 cup of the stock. Serve immediately.

I have been on a vegan kick for a few months now.  Ever since I started reading this book called Eat To Live by 

It really opened my eyes about eating more plant based foods and cutting out meat products for health reasons. There are many testimonials in Dr. Furmens book where people have reversed diabetes and heart desease and they no longer have to control it with medince.  It really hasn’t been as hard as I thought it would be.  I didn’t have any withdrawls like with coffee or sugar.  It was actually a easy transition as long as you take it slowly.  Yes, I still eat meat but not as much.  Give it a try for a week and see how you feel or if it makes a difference.  

This creamy mushroom barley soup isn’t vegan with the beef broth being added, so if you want you can add vegetable broth and add a cashew cream instead of sour cream.
