Creamy Mushroom and Barley Soup

This soup is simple with only a few fresh ingredients and the main star mushrooms.  So here is my version of mushroom soup, I saw Martha Stewart make on one of her shows. I did change a few ingredients in mine but it is basically still the same recipe.

Here is the video where you can watch her make her barley and mushroom soup below from Cooking School episode 308. Martha Stewart Living Television, Episode 10231

I have been on a vegan kick for a few months now.  Ever since I started reading this book called Eat To Live by Joel Fuhrman.

Eat to Live

The Book Eat to Live opened my eyes about eating more plant based foods and cutting out meat products for health reasons. There are many testimonials in Dr. Furmens book where people have reversed diabetes and heart desease and they no longer have to control it with medince.  It really hasn’t been as hard as I thought it would be.  I didn’t have any withdrawls like with coffee or sugar.  It was actually a easy transition as long as you take it slowly.  Yes, I still eat meat but not as much.  Give it a try for a week and see how you feel or if it makes a difference.

This creamy mushroom barley soup isn’t vegan with the beef broth being added, so if you want you can add vegetable broth and add a cashew cream instead of sour cream.

A quick tip on where to find dried mushrooms in the grocery store. I found mine in the vegetable section by the vegan items in small bags. At first I was truly lost, I never heard of dried mushrooms. Also remember they have to sit overnight in water so they can plump up. Don’t be like I did and think I could make this a quick meal. It does take a while but it’s so worth it.

I couldn’t believe how meaty these mushrooms made this soup taste, it was really amazing. The way the mushrooms plump up in the water overnight you can see how beefy they look.

Simple Steps for Rehydrating Dried Mushrooms

Soak the  dried mushrooms in warm water for about 20 to 30 minutes or until softened.

Rinse the dried mushroom with cold water.

Place the dried mushrooms in a bowl with warm water to cover.

Here is the finished product, let me know what you think or if you made any changes when you made your version of this creamy mushroom and barley soup.
