Banana almond oat muffins are the perfect combination for a healthy, quick and breakfast for those busy mornings or as an afternoon snack. You can always add some raisins, blueberries or even get some mini chocolate chips for a special afternoon treat.

I wanted to find a way to make a more healthy breakfast muffin that even the pickiest eater would love. The hardest part was to figure out how I could make a healthy muffin that wasn’t dry. That was packed with wholesome goodness to give me energy and feel satisfied.
At first, when I tried to make these muffins without the egg and they seemed way too dry. If you want to omit the egg, you could always use applesauce or yogurt instead to make the muffins moister. Don’t be scared of using butter it does make these muffins taste much better. Why cook and then eat something that doesn’t make you happy.
Life is too short not to enjoy what your eating and there are many ways to eat foods that are yummy and healthy. You have to experiment a little bit to find the right mix for a balanced and healthy life. You can do this!

- 2 large bananas
- 1 cup oats
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 cup brown sugar
- 1 tsp cinnamon
- 1 cup whole wheat flour
- 1/2 tsp salt
- 1 tsp vanilla extract
- 4 tbsp melted butter cooled
- 1 egg
- almonds slivered

- Preheat oven to 400 degrees
- spray muffin pan with cooking spray or use cup cake liners.
- to a bowl add cooled melted butter, bananas, egg, whole wheat flour and brown sugar. Mix until blended well.
- add salt, cinnamon, vanilla, baking soda, baking powder and mix for a minute.
- stir in oats and pour into muffin pan.
- top with a few slivered almonds.
- bake for 15 minutes & let them cool for 5 minutes.
